Spanish chicken pie

Spanish chicken pie
- Preparation time 10 minutes - Cooking time 30 minutes - Enough for four people
Ingredients:
- One kilogram of finely chopped potatoes.
- Three and a half teaspoons of smoked paprika spice.
- Small spoon of salt.
- A tablespoon of olive oil.
- Two onions cut into strips.
- Two cloves of garlic mashed.
- Eight hundred grams of chopped tomatoes.
- Three hundred grams of cooked boneless chicken.
- One hundred and forty grams of chopped roasted peppers.
- Half a small cup of olives cut in half.
Method of preparation
- Boil the potatoes in a pot filled with water over a high temperature to become soft for fifteen to twenty minutes.
- Drain the potatoes from the water and put them in another pot and mash them well, then add two tablespoons of smoked paprika on top and stir them well (other types of spices can be added to the mashed potatoes, as desired).
- Heat the oil in a large frying pan and put the onions, garlic and salt on it until their color changes to golden.
- Add the roasted peppers to the onions, garlic and stir them well for one minute.
- Add the chopped tomatoes to the previous ingredients in the pan and cook them over a low heat until all ingredients are mixed.
- Transfer the mixture to another pot containing the chicken and olives, and stir them well.
- Pour the previous mixture over the potato puree in a baking tray designated for the pie and then put it in the preheated oven at 180°C for about fifteen minutes until the mashed potatoes become golden.
