CHERRY CLAFOUTIS
Cherry
clafoutis is the easiest and most popular dessert to enjoy cherries. The recipe is very easy to make.
Ingredients / for 8 people
600 g fresh cherries
250 ml milk (cow or vegetable)
180 g
flour
100 g almond powder
30 g melted butter
100 g sugar
3 eggs
1 sachet of vanilla sugar
100 g full cream
1 pinch of salt
10 g Kirsch (optional)

How to
prepare
1-In a small
saucepan, melt the butter and let it come down to room temperature.
2-In a bowl,
whisk the eggs with the sugar, vanilla sugar and salt without whitening.
3-Add the
flour and almond powder and mix until smooth.
4-Pour in the
milk in two batches and the cream, mixing between each addition of liquid.
5-Finish by
adding the melted butter at room temperature and the Kirsch, then mix again.
6-Wash and
remove the stalks from the cherries and place them whole in a 20 cm diameter
dish.
7-Pour the
clafoutis batter to the height of the pan so as to cover the cherries
completely.
8-Bake the
clafoutis at 200°C for about 40 minutes.
9-Remove the
clafoutis from the oven 10 minutes before the end of the cooking time, place a
few knobs of butter and sprinkle brown sugar over the entire surface and
continue cooking to caramelize the surface.
10-Let the
clafoutis cool to room temperature before unmolding.
